Pork is cooked twice in this simple but popular Szechwan dish. Serve on a bed of steamed rice or noodles.

Serves 4

For best results, make the Plum Sauce (page 19) ahead of time so that the flavors have a chance to blend. Serve with steamed rice.

Pork in Plum Sauce

1 pound boneless pork loin chops

1 tablespoon soy sauce

1 tablespoon cornstarch

1 teaspoon baking soda

2 carrots

2 slices ginger

½ cup Plum Sauce (page 19)

3 tablespoons oil for stir-frying

2 green onions, thinly sliced on the diagonal
